Process validation is a cornerstone of major international food safety regulations and standards, including Codex and F.D.A. Food Safety Modernization Act (FSMA). SurroNovⓇ surrogates are a key tool to comply with them. The use of a surrogate is usually considered as a “gold standard” for process validation, as it gives a real vision of a process efficacy, in its specific industrial environment. The Guidelines for the Validation of Food Safety Control Measures (CAC/GL 69 – 2008), adopted by codex Alimentarius 2008, underline the interest of using non-pathogenic surrogate bacteria to provide scientifically valid experimental data that demonstrate the efficacy of a process:
